Trip to Powell River

Monday April 8, 2024

We walked on the 9:55 ferry at Little River, in a blustery cold wind.
The Powell River dancers met us at the other side, and took us to the Coastal Cookery restaurant for lunch. Then they took us up to the school where we danced in the gym, from 2 till 4 PM. We were served a delicious tea with cranberry tart, shortbreads and macaroons. before taking us back down to the ferry to catch the ferry back to Little River.

Cranberry Tart

Chocolate Oat Cookies

Chocolate Coconut Macaroons

• 1 ½ cups white sugar
• 5 tbsp. cocoa
• ½ cup milk
• ½ cup butter
• 3 cups oatmeal
• 1 cup coconut
• 1 tsp. vanilla
• ¼ tsp. salt

• Combine first two ingredients in a saucepan and slowly add milk.
• Stir over low heat until the sugar is dissolved, then bring to a boil.
• Add butter and oatmeal and stir briskly for 1 to 2 minutes (the lower time will make macaroons chewier).
• Remove from heat and add coconut, vanilla and salt.
• Form macaroons and place on waxed paper on cookie sheets until cool.

(I don’t know if you actually need the waxed paper, I’ve never tried them without using it.)
